A flavorful baked white bean dish topped with melted cheese and spicy chile crisp, perfect for a quick appetizer or snack.

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic, thinly sliced
  • 3 scallions scallions, thinly sliced, white and light green parts (reserve dark greens for later)
  • 1 tablespoon tomato paste
  • 2 teaspoons chile crisp or chile paste (to taste)
  • 2 15-ounce cans white beans, drained and rinsed (cannellini or Great Northern)
  • ½ teaspoon fine sea salt (plus more to taste)
  • 8 ounces sharp white Cheddar, grated ((about 2 cups))

Instructions 

  • Preheat oven to 475°F (245°C). Heat olive oil in a 10-inch ovenproof skillet over medium-high.
  • Add garlic and white/light green scallion slices; cook until lightly golden, 1-3 minutes.
  • Stir in tomato paste and chile crisp; cook for 1 minute.
  • Add beans and salt; taste and adjust seasoning. Sprinkle cheese evenly over top.
  • Bake for 6-10 minutes until cheese melts and browns. Optional: broil for 1-2 minutes for extra toastiness. Garnish with scallion greens and serve.

Notes

Use fresh chile crisp for best flavor, and adjust spice level to taste.
