white beans, drained and rinsed
(cannellini or Great Northern)

sharp white Cheddar, grated

Instructions
Preheat oven to 475°F (245°C). Heat olive oil in a 10-inch ovenproof skillet over medium-high.
Add garlic and white/light green scallion slices; cook until lightly golden, 1-3 minutes.
Stir in tomato paste and chile crisp; cook for 1 minute.
Add beans and salt; taste and adjust seasoning. Sprinkle cheese evenly over top.
Bake for 6-10 minutes until cheese melts and browns. Optional: broil for 1-2 minutes for extra toastiness. Garnish with scallion greens and serve.
Notes
Use fresh chile crisp for best flavor, and adjust spice level to taste.
