A delicious and hearty stuffed pepper recipe filled with chicken, rice, and cheese, topped with crunchy crackers and fresh parsley.

Instructions
Preheat oven to 400°F (200°C).
Slice peppers, remove seeds, and place in a baking dish.
Cook shallot in olive oil until translucent, then add garlic and broccoli; cook until bright green.
Mix in chicken, rice, oregano, salt, pepper, and half the cheese; add water/broth as needed.
Fill peppers with mixture, top with remaining cheese, cover with foil, and bake 30 minutes. Uncover and bake 15-20 minutes until peppers are soft.
Top with crushed crackers and parsley before serving.
Notes
For extra flavor, use freshly grated cheese and fresh herbs.
