Ingredients

Meat and Spices

  • 1 lb ground beef
  • 2 tsp ground cumin
  • 1.5 tsp dried minced onion
  • 1.5 tsp garlic powder

Sauces and Broth

  • 2 tbsp tomato paste
  • 0.5 cup diced tomatoes with green chilies (Rotel brand preferred)
  • 1 cup beef broth
  • 1.5 cups whole milk (divided)
  • 1 cup water

Pasta and Cheese

  • 8 oz shell pasta
  • 1 cup Monterey jack cheese (shredded)
  • 1 cup mild cheddar cheese (shredded)

Instructions 

  • Cook ground beef with cumin, minced onion, and garlic powder until fully cooked. Drain excess fat.
  • Add tomato paste, diced tomatoes, beef broth, and 1 cup milk. Bring to a gentle boil.
  • Add pasta and simmer until cooked, then reduce heat.
  • Stir in cheeses and remaining milk until melted and combined. Serve warm.

Notes

For extra flavor, top with fresh cilantro or sliced jalapenos.
