A delicious combination of fluffy pancakes topped with flavored soured cream, smoked salmon, and fresh salad leaves for a delightful meal.

Ingredients

Pancake Batter

  • 1 batch Cheese & Chive Pancakes ((See Recipe Notes for recipe))
  • 200 g smoked salmon (thinly sliced, remove from fridge 30 minutes before eating)
  • 200 ml soured cream
  • 0.5 lemon lemon (juice and zest)
  • 1 tbsp chopped chives
  • 1 pinch mild chilli flakes (optional)
  • to taste black pepper
  • to taste salt
  • 4 handfuls rocket or other salad leaves
  • 4 lemon wedges lemon wedges

Instructions 

  • Mix soured cream with lemon juice, zest, chives, chilli flakes, black pepper, and salt. Set aside.
  • Reheat pancakes if needed, then divide among plates. Top each with flavored soured cream and smoked salmon.
  • Garnish with black pepper, chopped chives, and chilli flakes. Serve with salad leaves and lemon wedges.

Notes

Prepare the flavored soured cream ahead for easier assembly.
