A fragrant and moist bread infused with chai spices, perfect for teatime or breakfast.

Instructions
Preheat oven to 160°C (fan) or 180°C (conventional). Grease a loaf pan and line with parchment.
Steep chai in boiling water for 10-15 mins, then mix with soy milk and vinegar. Strain to get 220ml of chai mixture.
Whisk dry ingredients together. In a separate bowl, mix wet ingredients including the chai mixture.
Combine wet and dry, gently mixing until just combined. Pour batter into prepared pan and bake for 50-60 mins.
Cool the bread, then prepare glaze by mixing glaze ingredients. Pour over cooled bread and garnish with star anise and orange slices.
Notes
Ensure not to over-mix the batter to keep the bread light and moist.
