Chai Bread

A fragrant and moist bread infused with chai spices, perfect for teatime or breakfast.

Ingredients

Dry ingredients

  • 25 g loose chai (see notes 1+2)
  • 120 ml water (freshly boiled)
  • 160 ml soy milk
  • 270 g all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves (or allspice)
  • ¼ teaspoon sea salt

Wet ingredients

  • 120 g light brown sugar (see notes 3+4)
  • 120 ml maple syrup
  • 120 g vegan Greek-style yogurt (or unsweetened applesauce) (see note 5)
  • 80 ml olive oil
  • 2 teaspoons vanilla extract (or 1 tsp vanilla bean paste)
  • 1 tablespoon orange zest (freshly grated)

Glaze ingredients

  • 180 g powdered sugar (confectioner's/icing sugar)
  • 1 tablespoon vegan Greek-style yogurt (or orange juice)
  • 1 tablespoon non-dairy milk (or orange juice) (2-3 tablespoons for thinner frosting)

Garnish

  • optional star anise (for garnish)
  • optional fresh orange slices (for garnish)

Instructions 

  • Preheat oven to 160°C (fan) or 180°C (conventional). Grease a loaf pan and line with parchment.
  • Steep chai in boiling water for 10-15 mins, then mix with soy milk and vinegar. Strain to get 220ml of chai mixture.
  • Whisk dry ingredients together. In a separate bowl, mix wet ingredients including the chai mixture.
  • Combine wet and dry, gently mixing until just combined. Pour batter into prepared pan and bake for 50-60 mins.
  • Cool the bread, then prepare glaze by mixing glaze ingredients. Pour over cooled bread and garnish with star anise and orange slices.

Notes

Ensure not to over-mix the batter to keep the bread light and moist.
