Delicious crispy fritters made with sweet caramelized onions and chickpea flour, perfect for a savory snack or appetizer.

Ingredients

Onions and seasonings

  • 1 large onion, sliced (about 4 cups)
  • 2 tablespoons olive oil
  • Splash or 2 splash balsamic vinegar
  • 2 pinches salt
  • 3/4 cups chickpea flour (garbanzo bean flour)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • Pepper pepper
  • 1/2 cup water
  • 1 teaspoon low sodium gluten free tamari

Vegetable oil

  • as needed vegetable oil (for shallow frying)

Dipping and optional toppings

  • to taste Sweet chili sauce (optional)
  • to taste Limes (optional)

Instructions 

  • Cook onions in olive oil on medium-low until caramelized, about 35-40 minutes, then add balsamic vinegar and cook a few more minutes.
  • Mix chickpea flour, garlic powder, salt, and pepper in a bowl.
  • Add water and tamari to the dry mixture, whisk until smooth, then fold in caramelized onions.
  • Heat vegetable oil in a pan, then drop batter tablespoonfuls and fry until browned on both sides.
  • Serve with sweet chili sauce and lime wedges or your preferred dipping sauce.

Ensure onions are caramelized thoroughly for the best flavor.
