A delicious and fresh sandwich combining basil, tomatoes, mozzarella, and a flavorful pesto aioli on toasted baguette.

Ingredients

Bread

  • 1 cup fresh basil leaves (no stems)
  • 2 tablespoons pine nuts
  • 1 small clove garlic
  • ¼ cup grated parmesan cheese
  • teaspoon ground black pepper
  • ¼ teaspoon salt
  • ¼ cup extra-virgin olive oil
  • ½ cup mayonnaise
  • 1 12-ounce French baguette French baguette
  • 2 medium ripe tomatoes (sliced)
  • 8 ounces fresh mozzarella cheese (sliced)
  • 2 tablespoons balsamic glaze
  • salt and ground black pepper (to taste) salt and ground black pepper
  • 1 cup arugula (packed)

Instructions 

  • Preheat oven to 350°F (180°C). Slice bread, toast for 6 minutes.
  • Blend basil, pine nuts, garlic, Parmesan, pepper, and salt until smooth. Add olive oil and mayonnaise to make pesto aioli.
  • Spread pesto on bread halves. Layer tomato slices, mozzarella, drizzle with balsamic, add arugula, then top with the other bread half.

Notes

For extra flavor, let the sandwich rest for 10 minutes before slicing.
