Enjoy a flavorful Cajun chicken dish with creamy sauce, topped with cheese and fresh cilantro for a satisfying meal.

Ingredients

Broth & Cream

  • 1 ½ cups chicken broth
  • ¾ cups heavy cream (can sub half and half)

Sweeteners & Spices

  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon brown sugar (light)
  • ½ teaspoon mustard powder
  • ½ teaspoon oregano
  • 1 pinch cayenne pepper
  • 1 pinch red pepper flakes

Chicken & Flour

  • 2 large boneless skinless chicken breasts
  • 1 ½ teaspoons Cajun seasoning
  • 3 tablespoons flour

Cooking Oils & Butter

  • 1-2 tablespoons olive oil (or avocado oil)
  • 3 tablespoons butter

Garlic & Tomatoes

  • 3 cloves garlic (minced)
  • 10 oz. Rotel diced tomatoes with green chilies (juice reserved)
  • ¾ cup cheddar jack cheese (shredded)
  • 2 teaspoons lime juice

Garnishes

  • as needed Lime Wedges
  • as needed Fresh Cilantro (roughly chopped)

Instructions 

  • Season chicken with Cajun seasoning and coat with flour.
  • Heat oil and cook chicken until golden; set aside.
  • In the same pan, melt butter, add garlic, and cook briefly.
  • Add diced tomatoes, cream, honey, hot sauce, and seasonings; simmer.
  • Return chicken to pan, top with cheese, and cook until melted. Garnish with lime and cilantro.

Notes

Adjust spice levels to taste and serve with lime wedges and cilantro for added freshness.
