A quick and hearty dish combining ground beef, rice, and shredded cabbage for a comforting meal in one skillet.

Ingredients

Vegetables and Aromatics

  • 6 cloves garlic (minced)
  • 1 piece onion (any color, minced)
  • 6 cups cabbage (shredded)
  • 1 lb ground beef (lean)
  • 3 Tbsp olive oil (split)
  • 1 cup long grain white rice
  • 1 1/4 cups low sodium chicken broth
  • 1 1/4 cups tomato sauce
  • 1 tsp smoked paprika (or regular paprika)
  • 1 tsp Italian seasoning
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp apple cider vinegar
  • 1 tsp kosher salt (split)
  • 1 tsp pepper (split)

Garnish

  • to taste minced fresh herbs (chives or parsley) (optional)

Instructions 

  • Mince garlic and onion. Shred cabbage. Sauté garlic and onion in 2 Tbsp olive oil until fragrant.
  • Add ground beef with salt and pepper; cook until browned. Stir in paprika and Italian seasoning.
  • In a separate skillet, toast rice in 1 Tbsp olive oil for 1-2 minutes. Add broth and tomato sauce, bring to a boil, then simmer covered for 16-18 minutes.
  • Once beef is cooked, add shredded cabbage with salt and pepper; cook until slightly softened. Stir in Worcestershire sauce and vinegar.
  • Combine cooked rice with beef and cabbage mixture. Garnish with fresh herbs if desired. Serve hot.

Notes

You can add a little chicken broth to loosen the mixture if needed. Garnish with fresh herbs for extra flavor.
