These crispy, flavorful butternut squash fritters are perfect for a gluten-free and paleo-friendly snack or meal.

Ingredients

  • 1 pound butternut squash (peeled and shredded)
  • 3 eggs eggs (whisked)
  • 1/2 cup gluten free flour (almond flour and tapioca blend)
  • 1/4 cup fresh herbs (finely chopped parsley, basil, sage, or cilantro)
  • 1/4-1/2 tsp garlic powder
  • 1 tsp salt
  • for cooking ghee or avocado oil (for frying)
  • 1/4 cup plain yogurt (dairy free or regular)
  • 1 tsp lemon or lime juice
  • 1 tbsp chopped parsley
  • pinch cumin
  • pinch salt

Instructions 

  • Combine shredded squash, eggs, flour, herbs, garlic powder, and salt in a bowl.
  • Heat oil in a skillet over medium-high heat. Scoop 2 tbsp of mixture, form into a ball, flatten, and cook until golden brown. Flip and cook other side.
  • Repeat with remaining mixture, adding more oil as needed. Drain on a wire rack.
  • Mix yogurt with lemon/lime juice to make dipping sauce. Serve fritters warm with sauce.

Notes

Ensure squash is well drained to prevent sogginess.
