A hearty and comforting vegetarian pot pie featuring roasted butternut squash, lentils, and a flaky crust, perfect for cozy dinners.

Filling

butternut squash, peeled, seeded and cubed

heavy liquid cream

Instructions
Prepare the dough by mixing flour, salt, sugar, and butter, then add water to form a dough. Chill and roll out.
Roast the butternut squash until tender. Sauté onions, garlic, celery, and carrots until softened.
Combine roasted squash, sautéed vegetables, flour, spices, broth, cream, and lentils to make the filling.
Fill the crust with the vegetable and lentil mixture, cover with top crust, and brush with beaten egg.
Bake at 375°F (190°C) for 40 minutes until golden brown.
Notes
For a vegan version, substitute the egg with plant-based milk or skip brushing.
