A rich and flavorful cake featuring toasted browned butter and finely chopped pecans, topped with creamy frosting and optional pecan garnish.

Ingredients

Cake

  • 1 cup unsalted butter
  • 3 cups cake flour
  • 1 cup granulated sugar
  • 1 cup light brown sugar, firmly packed
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups buttermilk, room temperature preferred
  • 2 large eggs, room temperature preferred
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups pecan halves, very finely chopped

Frosting

  • 1 1/2 cups unsalted butter, softened
  • 6 oz cream cheese, softened
  • 1/3 cup light brown sugar, firmly packed
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 4 1/2 cups powdered sugar
  • 1 tablespoon heavy cream
  • 1/3 cup pecan halves, very finely chopped (for garnish, optional)

Instructions 

  • Cook butter over medium/low heat until melted, then increase heat and cook until golden brown specks appear. Cool completely.
  • Preheat oven to 350°F (175°C). Grease three 8-inch pans and line with parchment.
  • Chop pecans finely; set aside 1 1/2 cups for cake and 1/3 cup for garnish.
  • Mix dry ingredients, add cooled browned butter, then incorporate buttermilk, eggs, vanilla, and chopped pecans. Divide into pans and bake 30 minutes. Cool.
  • Prepare frosting by beating butter, cream cheese, sugars, vanilla, and salt. Add powdered sugar and heavy cream until smooth. Assemble and frost the cake, decorating with chopped pecans if desired.

Notes

For best flavor, toast pecans lightly before chopping.
