Vegan Cheese Sauce
1 batch
vegan cheese sauce (or 7 oz of store-bought vegan cheese)
Instructions
Cook quinoa in vegetable broth until fluffy, about 15 minutes.
Steam or blanch broccoli until tender, then chop into bite-sized pieces.
Mix cooked quinoa, broccoli, chickpeas, spices, oats, nutritional yeast, soy sauce, and oil in a large bowl.
Transfer mixture to a baking dish, top with vegan cheese sauce.
Bake at 375°F (190°C) for 15-20 minutes until bubbly and golden.
Notes
Feel free to add extra spices or herbs for more flavor.
