A hearty and nutritious vegan casserole combining quinoa, broccoli, and flavorful spices topped with vegan cheese sauce.

Ingredients

Grains and Broth

  • 1 cup quinoa
  • 2 cups vegetable broth (or water (with salt))
  • 1 cup dairy-free milk

Canned Goods

  • 1 15 oz can chickpeas (rinsed and drained)

Spices and Seasonings

  • 1 tsp onion powder
  • 1 tsp oregano
  • 3/4 tsp paprika
  • 1/2 tsp sea salt
  • Black pepper to taste Black pepper

Vegetables

  • 1 medium-sized head broccoli

Oils and Fats

  • 1 tbsp oil

Dry Ingredients

  • 3 tbsp oats (gluten-free if needed)
  • 1 tbsp nutritional yeast
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • A pinch turmeric

Sauces and Condiments

  • 1 tsp soy sauce (gluten-free if needed)
  • A pinch smoked paprika
  • Salt and black pepper to taste Salt and black pepper

Additional Oils

  • 1 tbsp oil

Vegan Cheese Sauce

  • 1 batch vegan cheese sauce (or 7 oz of store-bought vegan cheese)

Instructions 

  • Cook quinoa in vegetable broth until fluffy, about 15 minutes.
  • Steam or blanch broccoli until tender, then chop into bite-sized pieces.
  • Mix cooked quinoa, broccoli, chickpeas, spices, oats, nutritional yeast, soy sauce, and oil in a large bowl.
  • Transfer mixture to a baking dish, top with vegan cheese sauce.
  • Bake at 375°F (190°C) for 15-20 minutes until bubbly and golden.

Notes

Feel free to add extra spices or herbs for more flavor.
