A flavorful breakfast taco combining eggs, beans, caramelized onions, and spicy chipotle sour cream for a satisfying start to your day.

Ingredients

Vegetables

  • 0.5 cup onion, sliced (about 1 cup)
  • 1 Tbsp. butter, divided
  • 0.5 cup sour cream
  • 1-2 peppers chipotles in adobo (finely chopped)
  • 6 eggs eggs
  • 0.5 tsp. salt
  • 0.125 tsp. pepper
  • 8 corn tortillas corn tortillas
  • 15 oz. can of refried black beans (or make your own)

Optional toppings

  • to taste avocado slices, cilantro (optional)

Instructions 

  • Cook onions in 1/2 Tbsp butter over medium heat until lightly browned, then set aside.
  • Mix chopped chipotle peppers into sour cream; add sauce for spiciness.
  • Whisk eggs with salt and pepper, then scramble in remaining butter over medium-low heat.
  • Heat beans until hot and warm tortillas as desired.
  • Assemble tacos: layer beans, eggs, onions, and sour cream on tortillas; top with optional avocado and cilantro.

Notes

For extra flavor, toast tortillas briefly before assembling.
