Instructions
Cook onions in 1/2 Tbsp butter over medium heat until lightly browned, then set aside.
Mix chopped chipotle peppers into sour cream; add sauce for spiciness.
Whisk eggs with salt and pepper, then scramble in remaining butter over medium-low heat.
Heat beans until hot and warm tortillas as desired.
Assemble tacos: layer beans, eggs, onions, and sour cream on tortillas; top with optional avocado and cilantro.
Notes
For extra flavor, toast tortillas briefly before assembling.
