A delicious and hearty breakfast quesadilla filled with turkey sausage, eggs, and cheese, perfect for a quick morning meal.

Ingredients

Tortillas

  • 4 large flour tortillas

Meat

  • 1 pound ground turkey sausage

Cheese

  • 2 cups shredded Colby Jack cheese

Eggs and Dairy

  • 6 eggs eggs
  • 0.5 cup milk

Seasonings

  • to taste Salt and pepper

Garnish and Serve

  • for garnish and serving Sliced green onions, Salsa, Sour cream

Instructions 

  • Cook turkey sausage in a skillet until browned, then set aside.
  • Whisk eggs, milk, salt, and pepper; scramble in the same skillet until just set.
  • Lay tortillas flat, spread scrambled eggs on half, add sausage and cheese, then fold.
  • Cook folded quesadillas in a skillet until golden and crispy, about 2-3 minutes per side.
  • Slice into wedges, serve warm with salsa, sour cream, and green onions.

Notes

For a spicier kick, add hot sauce or diced jalapeƱos to the filling.
