A hearty and flavorful bowl combining seasoned chicken, fresh vegetables, and black-eyed peas, perfect for a satisfying meal.
Ingredients
Protein
1lbchicken breast(diced into 1-2 inch pieces)
2teaspoonsblackened seasoning
½teaspoonsalt(optional, use only if seasoning doesn't contain salt)
2tablespoonsolive oil(divided)
Vegetables
1smallonion(finely diced)
2mediumcarrots(diced into small pieces (⅓ - ½ inch), about 1.5 cups)
8-12ozfresh green beans(ends trimmed and sliced into 1-inch pieces, about 2.5 - 3 cups)
Liquids and Canned Goods
1cupchicken broth
14ozcanned diced tomatoes(do not drain, use juices)
14ozcanned black-eyed peas(drained and rinsed, about 2 cups cooked)
2-3tablespoonsfresh parsley leaves(finely diced)
Instructions
Toss chicken with blackened seasoning and salt (if using). Cook in a skillet with 1 tbsp olive oil until browned and cooked through. Remove and set aside.
Sauté carrots and onion in remaining olive oil until tender, about 8-10 minutes.
Add green beans, chicken broth, and diced tomatoes. Bring to a boil, then simmer until green beans are cooked, about 5-10 minutes.
Stir in black-eyed peas and cooked chicken, then add parsley. Serve hot as a soup or over rice.
Notes
For a more soupy consistency, add extra chicken broth or uncover to reduce liquid.
