Ingredients

Dairy and Oils

  • 0.25 cup unsalted butter, cubed
  • 0.25 cup neutral oil (canola)
  • 1 cup semisweet chocolate chips
  • 1 teaspoon instant coffee or espresso (optional) (optional)

Dry ingredients

  • 0.75 cup all-purpose flour (scooped and leveled)
  • 0.25 cup Dutch-process cocoa powder (sifted)
  • 0.5 teaspoon fine sea salt
  • 1 teaspoon baking powder

Wet ingredients

  • 2 large eggs (room temperature)
  • 1 cup granulated sugar
  • 2 teaspoons vanilla

Instructions 

  • Adjust oven rack to center and preheat to 350°F (175°C). Line an 8x8-inch pan with foil and spray.
  • Melt butter, oil, chocolate, and coffee in microwave or double boiler; cool slightly.
  • Whisk eggs and sugar until frothy, then add vanilla. Mix in melted chocolate mixture.
  • Combine dry ingredients and fold into wet mixture until just combined. Pour into prepared pan.
  • Bake for 25-30 minutes, check for doneness, then cool in pan for 15 minutes before removing.

Notes

For extra fudginess, slightly underbake and let cool completely before cutting.
