A hearty and comforting turkey soup perfect for using leftover turkey, packed with vegetables and herbs.
Ingredients

Instructions
Heat olive oil and butter in a large pot over medium heat.
Add chopped onion, carrots, celery, and garlic; cook until vegetables are soft.
Add thyme, stock, turkey, and bay leaves; simmer for 10 minutes. Season with salt and pepper.
Add couscous; cook until tender, about 5 minutes.
Remove herbs, serve hot, garnished with parsley.
Notes
You can use leftover turkey for a quick and flavorful meal.
