A hearty and comforting turkey soup perfect for using leftover turkey, packed with vegetables and herbs.

Ingredients

olive oil and butter

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 piece onion (chopped)
  • 1 piece carrot (chopped)
  • 2 stalks celery (chopped)
  • 1 clove garlic (minced)
  • 4 sprigs thyme
  • 6 cups turkey or chicken stock
  • 2 cups cooked turkey
  • 2 bay leaves bay leaves
  • ½ cup couscous
  • 1 tablespoon parsley (chopped)

Instructions 

  • Heat olive oil and butter in a large pot over medium heat.
  • Add chopped onion, carrots, celery, and garlic; cook until vegetables are soft.
  • Add thyme, stock, turkey, and bay leaves; simmer for 10 minutes. Season with salt and pepper.
  • Add couscous; cook until tender, about 5 minutes.
  • Remove herbs, serve hot, garnished with parsley.

Notes

You can use leftover turkey for a quick and flavorful meal.
