Ingredients

  • 5 eggs eggs
  • 1.25 cups half-and-half
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon ground dry mustard
  • 1 tablespoon plain flour
  • 0.5 pound bacon (sausage or ham can be used as well)
  • 1 handful fresh spinach (mushrooms are optional)
  • 1.25 cups colby jack cheese, shredded
  • 0.5 onion onion

Instructions 

  • Preheat the oven to 375°F (190°C).
  • Cook the bacon until crispy, then chop it.
  • In a bowl, whisk together eggs, half-and-half, salt, pepper, mustard, and flour.
  • Add the chopped bacon, spinach, cheese, and onion to the egg mixture.
  • Pour the mixture into a pie crust and bake for 45 minutes.
  • Let it cool for a few minutes before slicing and serving.

Notes

For a vegetarian option, omit the bacon and add more vegetables.
