Instructions
Heat olive oil in a large skillet over medium-high heat. Add diced onion and bell pepper, sauté for 3-4 minutes until softened.
Add minced garlic and cook for another minute until fragrant.
Add ground beef to the skillet and cook until browned, breaking it up with a spatula. Drain excess fat if needed.
Sprinkle taco seasoning over the beef mixture and stir well. Add corn, black beans, diced tomatoes, and beef broth. Simmer for 5-7 minutes.
Sprinkle shredded cheddar cheese over the mixture, cover, and cook for 2-3 minutes until melted. Garnish with toppings and serve hot.
Notes
For extra flavor, add a squeeze of lime juice before serving.
