A quick and flavorful one-pan meal combining seasoned ground beef with vegetables and cheese, perfect for a satisfying dinner.

Ingredients

Meat and Vegetables

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 bell pepper, diced bell pepper
  • 2 cloves garlic, minced
  • 1 cup corn kernels, fresh or frozen
  • 1 cup canned black beans, rinsed and drained
  • 1 cup diced tomatoes, canned or fresh
  • 1 cup shredded cheddar cheese
  • 1 tablespoon taco seasoning
  • 0.5 cup beef broth or water
  • 1 tablespoon olive oil

Salt and pepper to taste

Instructions 

  • Heat olive oil in a large skillet over medium-high heat. Add diced onion and bell pepper, sauté for 3-4 minutes until softened.
  • Add minced garlic and cook for another minute until fragrant.
  • Add ground beef to the skillet and cook until browned, breaking it up with a spatula. Drain excess fat if needed.
  • Sprinkle taco seasoning over the beef mixture and stir well. Add corn, black beans, diced tomatoes, and beef broth. Simmer for 5-7 minutes.
  • Sprinkle shredded cheddar cheese over the mixture, cover, and cook for 2-3 minutes until melted. Garnish with toppings and serve hot.

Notes

For extra flavor, add a squeeze of lime juice before serving.
