canned diced tomatoes (with the juice)

carrots (peeled and sliced into 1 inch pieces)

celery (cut into 1 inch pieces)

russet potatoes (peeled and cut into 1 inch chunks)
Herbs and Seasonings

Instructions
Heat oil in a large pot and brown the meat in batches. Set aside.
Add onions and cook until softened, then add garlic for 1 minute.
Pour in beef broth, add tomatoes, Worcestershire, Liquid Smoke, tomato paste, spices, and meat. Simmer for 1-1.5 hours until tender.
Add carrots, celery, and potatoes. Cover and cook for 30 minutes.
Optional: Thicken stew with flour mixed with broth, then stir in. Garnish with parsley.
Notes
For a thicker stew, repeat the flour slurry process as needed.
