Ingredients

Meat

  • 1 lb beef sirloin, flank steak, or ribeye, thinly sliced against the grain

Noodles

  • 8 oz chow mein noodles or egg noodles, fresh or dried

Vegetables and Oils

  • 2 tablespoons vegetable oil or sesame oil (for added flavor)
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 cup bell peppers, thinly sliced (any color)
  • 1 cup snow peas or snap peas, trimmed
  • 2 medium carrots, julienned or thinly sliced

Sauces and Seasonings

  • 2-3 tablespoons soy sauce or tamari (for gluten-free version)
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce (optional, for added sweetness)
  • 1 teaspoon sesame oil (optional, for extra flavor)
  • 0.5 cup beef broth or water
  • 1 teaspoon sugar (optional, for sweetness)

Garnishes

  • 2 green onions chopped, for garnish
  • Sesame seeds optional for garnish

Instructions

  • Heat oil in a large skillet or wok over medium-high heat. Add sliced beef and cook until browned, about 2-3 minutes. Remove and set aside.
  • In the same pan, add garlic, ginger, and sliced onions; cook for 1 minute until fragrant. Add vegetables and cook for 3-4 minutes until tender-crisp.
  • Return beef to the pan. Add soy sauce, oyster sauce, hoisin sauce, sesame oil, beef broth, and sugar. Toss to combine and cook for 2 minutes.
  • Meanwhile, cook noodles according to package instructions. Drain and add to the skillet, tossing to coat evenly.
  • Garnish with chopped green onions and sesame seeds. Serve hot.

Notes

For a gluten-free version, use tamari instead of soy sauce and gluten-free noodles.
