A quick and flavorful rice bowl featuring seasoned ground beef, colorful bell peppers, and savory seasonings, perfect for a satisfying meal.

Ingredients

Meat

  • 1 lb ground beef 85 15 or 90 10

Vegetables

  • 1 cup sliced bell peppers (red, green, yellow, or orange)
  • 1 small onion, diced
  • 2 cloves garlic, minced

Pantry Items

  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp black pepper
  • to taste salt (start with 1/4 tsp)
  • optional red pepper flakes or hot sauce

Toppings (optional)

  • varies green onions, cilantro, avocado, lime, cheese, sriracha

Instructions 

  • Dice onion, mince garlic, slice bell peppers, and cook rice if needed.
  • Heat olive oil in a large skillet over medium-high. Add ground beef and cook until browned, about 6-8 minutes. Season lightly.
  • Push beef to the side. Sauté onion and garlic until fragrant, then mix together.
  • Add sliced bell peppers and cook for 4-5 minutes until tender. Stir in tomato paste, soy sauce, paprika, cumin, pepper, and red pepper flakes if using. Cook for 2 minutes.
  • Add cooked rice and stir to combine. Cook for another 2-3 minutes to meld flavors. Serve hot with optional toppings.

Notes

For extra flavor, garnish with fresh herbs or a squeeze of lime.
