BBQ Chicken Quesadilla

A delicious and easy-to-make quesadilla filled with smoky BBQ chicken, melted cheese, and sautéed peppers and onions.

Ingredients

Protein

  • 2 cups cooked chicken, shredded
  • 1.5 cups BBQ sauce

Cheese

  • 1.5 cups shredded cheese (cheddar or mozzarella)

Vegetables

  • 1 cup bell peppers, sliced (any color)
  • 0.5 cup red onion, thinly sliced

Other

  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • to taste salt and pepper

Garnish

  • optional fresh cilantro (for garnish)

Instructions 

  • Mix shredded chicken with BBQ sauce until evenly coated.
  • Sauté bell peppers and red onion in 1 tablespoon olive oil for 3-4 minutes; season with salt and pepper.
  • Spread BBQ chicken mixture on half of a tortilla, sprinkle with cheese, and add sautéed vegetables. Fold in half.
  • Cook each quesadilla in a skillet over medium heat for 3-4 minutes per side until golden and cheese melts.
  • Repeat with remaining tortillas. Slice into wedges, garnish with cilantro, and serve warm.

Notes

For extra flavor, add a dash of hot sauce or serve with sour cream.
