A delicious and easy-to-make quesadilla filled with smoky BBQ chicken, melted cheese, and sautéed peppers and onions.
Ingredients

cooked chicken, shredded

BBQ sauce

shredded cheese (cheddar or mozzarella)

bell peppers, sliced

Instructions
Mix shredded chicken with BBQ sauce until evenly coated.
Sauté bell peppers and red onion in 1 tablespoon olive oil for 3-4 minutes; season with salt and pepper.
Spread BBQ chicken mixture on half of a tortilla, sprinkle with cheese, and add sautéed vegetables. Fold in half.
Cook each quesadilla in a skillet over medium heat for 3-4 minutes per side until golden and cheese melts.
Repeat with remaining tortillas. Slice into wedges, garnish with cilantro, and serve warm.
Notes
For extra flavor, add a dash of hot sauce or serve with sour cream.
