These delicious banana oatmeal bars are a quick, healthy snack perfect for on-the-go or a quick breakfast.

Ingredients

Bananas

  • 1.5 cups mashed ripe bananas ((3 medium bananas))
  • 0.5 cup peanut butter
  • 2 cups old-fashioned rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons maple syrup (optional)
  • 0.5 teaspoon salt
  • 0.75 cup chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  • Mash bananas in a large bowl, then mix in peanut butter, vanilla, and maple syrup.
  • Stir in oats, cinnamon, and salt until combined, then fold in chocolate chips.
  • Press mixture into the pan and bake for 18-22 minutes until golden.
  • Cool completely before cutting into bars. Store refrigerated up to 5 days.

Notes

For added flavor, sprinkle with extra cinnamon or nuts before baking.
