  • 2 medium ripe bananas (about 1 cup mashed)
  • 2 cups rolled oats
  • 1/4 cup creamy or chunky peanut butter
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon baking powder
  • 1/4 cup mini chocolate chips (optional)
  • 1/4 cup chopped nuts (walnuts or pecans) (optional)
  • 1/4 cup dried fruit (raisins, cranberries, or chopped dates) (optional)
  • a dash cinnamon or nutmeg (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment.
  • Mash bananas, then mix with peanut butter and honey until smooth.
  • Stir in oats, baking powder, and optional add-ins. Add milk if too dry.
  • Press mixture into pan and bake for 18-22 minutes until golden.
  • Cool, then slice into squares and serve.
