Ingredients

Baking Ingredients

  • 120 ml oil
  • 150 g brown sugar
  • 100 g sugar
  • 425 g pumpkin purée (1 can)
  • 2 large eggs
  • 5 ml vanilla (1 teaspoon)
  • 30 g greek yogurt (2 tablespoons)
  • 5 g baking powder (1 teaspoon)
  • 2 g baking soda (1/2 teaspoon)
  • 2 g cinnamon (1 teaspoon)
  • 4 g pumpkin pie spice (2 teaspoons)
  • 240 g flour (2 cups)
  • 1 g salt (1/8 teaspoon)
  • 90 g dark chocolate chips (1/2 cup)

Instructions 

  • Preheat oven to 425 degrees.
  • Combine oil, eggs, sugars, pumpkin, yogurt, and vanilla in a bowl.
  • Add baking soda, baking powder, cinnamon, pumpkin pie spice, and salt; whisk in flour.
  • Fold in chocolate chips.
  • Scoop batter into muffin liners and sprinkle with more chocolate chips.
  • Bake for 5 minutes at 425°F, then reduce to 350°F for 15 minutes.
