  • 1 tablespoon Coconut oil, melted (to grease the pan, or other cooking oil)
  • 2 cups Old-fashioned rolled oats
  • ¾ cup Peanut butter (or other nut butter)
  • 5 tablespoons Maple syrup (or honey, agave nectar)
  • 1 teaspoon Pure vanilla extract
  • 1 teaspoon Ground cinnamon
  • ¾ cup Greek yogurt (or your favorite type of yogurt)
  • Desired toppings Desired toppings (such as diced fruit, fresh berries, chopped nuts, or chocolate chips)

Instructions 

  • Preheat oven to 350°F (175°C) and grease a muffin tin.
  • Mix oats and cinnamon in a bowl.
  • Combine peanut butter, maple syrup, vanilla, and yogurt until smooth.
  • Mix wet and dry ingredients until combined.
  • Scoop into muffin tin, add toppings, and bake for 20-25 minutes.
  • Cool slightly before serving. Enjoy!
