Instructions
Preheat oven to 400°F (200°C). Line a baking dish with parchment paper.
Pat salmon dry, drizzle with olive oil, and season with salt, pepper, thyme, oregano, and lemon juice. Set aside.
Arrange zucchini, cherry tomatoes, and red onions in the dish. Toss with olive oil, garlic, salt, and pepper. Nestle salmon on top.
Top salmon with lemon slices, sprinkle chili flakes if using, and bake for 20–25 minutes until flaky and vegetables are tender.
Garnish with herbs, serve with lemon wedges and side of choice.
Notes
For extra flavor, drizzle with additional olive oil before serving.
