A fresh and vibrant salsa combining creamy avocados with sweet corn and zesty lime, perfect for snacking or as a topping.

Ingredients

  • 2 medium avocados (peeled, pitted, and diced)
  • 2 cans (15.25 ounces) sweet corn (drained)
  • 1 medium Roma tomato (diced (about ½ cup))
  • 1 medium red onion (diced (about 1 cup))
  • 1 large jalapeño pepper (seeded and diced)
  • 0.5 cup fresh cilantro (chopped)
  • 1 green onion green onion (thinly sliced)
  • 1 teaspoon garlic (minced)
  • 1 teaspoon kosher salt
  • 1 medium lime (juiced)

Instructions 

  • Combine corn, red onion, jalapeño, tomato, green onion, garlic, and cilantro in a bowl.
  • Gently fold in the diced avocados.
  • Drizzle lime juice and sprinkle salt; gently stir to combine.
  • Cover and refrigerate for at least 15 minutes before serving.
  • Store leftovers covered in the refrigerator for up to 5 days.
