Asha's Chai Apple Hand Pies

Delight in these flaky hand pies filled with spiced apple filling and topped with a sweet glaze, perfect for a cozy treat or dessert.

Ingredients

Dough

  • 2 cups all-purpose flour
  • 1.5 tablespoons granulated white sugar
  • 0.75 teaspoon kosher salt
  • 10 tablespoons unsalted butter, cold and cubed
  • 4 to 6 tablespoons ice water

Filling

  • 1.25 pounds sweet baking apples, peeled, cored and diced
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 0.25 cup light or dark brown sugar
  • 0.25 cup granulated white sugar
  • 1.5 tablespoons chai masala
  • 0.25 teaspoon kosher salt
  • 2 tablespoons all-purpose flour
  • 1 large egg, lightly beaten

Glaze

  • 1 cup powdered confectioners' sugar
  • 2.5 tablespoons water
  • 0.5 teaspoon vanilla extract

Instructions 

  • Mix flour, sugar, and salt; cut in butter until crumbly. Add water gradually, form dough, chill for 1 hour.
  • Cook apples with butter, lemon juice, vanilla, sugars, chai, and salt until tender. Thicken with flour and cool.
  • Preheat oven to 375°F. Roll dough, cut into rectangles, and fill with apple mixture. Seal edges and refrigerate 15 minutes.
  • Cut slits, brush with egg wash, and bake for 30-34 minutes until golden. Cool on rack.
  • Mix powdered sugar, water, and vanilla to make glaze. Spoon over cooled pies and let set.

Notes

Chill the dough well for easier handling and ensure the pies are fully cooled before glazing for best results.
