13ozall-purpose flour
2ozgranulated sugar

2sticksbutter, cubed and chilled
½cupcold water
Apple Filling
1.5lbsthinly sliced gala apples
½cuplight brown sugar
1tbspcorn starch
2tsppure vanilla extract
2tsplemon juice
1tspcinnamon
½tspkosher salt
Egg Wash & Topping
1egg yolkegg yolk
1tbspmilk
raw sugarraw sugar(for sprinkling)
Vanilla Pecan Caramel
1cupgranulated sugar
6tbspbutter
½cupheavy cream
2tsppure vanilla extract
½tspkosher salt
1cupchopped pecans
Instructions
Mix flour, sugar, and salt; add butter and pulse until coarse crumbs. Add water and form dough; chill for 45 minutes.
Combine sliced apples with sugar, cornstarch, vanilla, lemon juice, cinnamon, and salt; let sit for 20 minutes.
Divide dough, roll into 8-inch circles, and place on parchment-lined pans. Fill centers with apple mixture, fold edges, brush with egg wash, sprinkle raw sugar, and bake at 425°F for 12-15 minutes.
Prepare caramel: heat sugar until amber, add butter, then cream, vanilla, salt, and pecans; cool slightly before serving.
