A hearty and flavorful stew combining tender beef with sweet apple cider and vegetables, perfect for a comforting meal.

Ingredients

Dried spices and seasonings

  • 1/3 cup all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Meat and vegetables

  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 4 tablespoons vegetable oil
  • 2 cups apple cider
  • 1 cup water
  • 2 tablespoons vinegar
  • 1 teaspoon dried thyme
  • 4 large carrots, cut into 1-inch pieces
  • 2 large potatoes, cut into 1-inch pieces
  • 2 medium onions, halved and sliced

Instructions 

  • Mix flour, salt, and pepper; coat beef with seasoned flour.
  • Brown beef in oil, then deglaze pan with apple cider, water, vinegar, thyme, and bay leaves.
  • Return beef to pan, bring to boil, then simmer covered for 1 hour.
  • Add vegetables, bring to boil, then simmer for 45 minutes until tender.
  • Adjust seasoning, discard bay leaves, and serve hot.

Notes

For extra flavor, add fresh herbs or a splash of red wine during simmering.
