Ingredients

Dry ingredients

  • 1.5 cups whole wheat flour
  • 0.5 cup quick oats
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt

Wet ingredients

  • 2 large eggs
  • 0.5 cup unsweetened applesauce
  • 0.5 cup honey
  • 0.33 cup olive oil
  • 1 teaspoon vanilla extract
  • 1 medium Honeycrisp apple, grated (about ¾ cup)
  • 1 medium carrot, peeled and grated (about ¾ cup)

Instructions 

  • Preheat oven to 350°F (175°C). Line a 12-cup muffin pan.
  • Mix dry ingredients in a large bowl. Whisk wet ingredients in a separate bowl.
  • Fold grated apple and carrot into wet mixture, then combine with dry ingredients.
  • Scoop batter into muffin cups, filling about ¾ full. Bake for 20-25 minutes.
  • Cool muffins in pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use fresh grated apple and carrot for added moisture and flavor.
