Instructions
Preheat oven to 350°F (175°C). Line a 12-cup muffin pan.
Mix dry ingredients in a large bowl. Whisk wet ingredients in a separate bowl.
Fold grated apple and carrot into wet mixture, then combine with dry ingredients.
Scoop batter into muffin cups, filling about ¾ full. Bake for 20-25 minutes.
