Instructions
Make apple pie filling: cook diced apples with butter, brown sugar, and cinnamon until soft and thickened, then set aside.
Prepare pancake batter: mix egg, melted butter, sugar, vanilla, and sour cream; fold in flour, baking powder, baking soda, and diced apples; let rest 30 minutes.
Heat skillet over medium, add butter, then pour 2 tbsp batter per pancake; cook until bubbles form, then flip and cook until golden.
Repeat until all batter is used; top pancakes with apple filling and optional maple syrup.
Notes
Let the batter rest for better fluffiness and cook pancakes on medium heat for even browning.
