Ingredients

dry ingredients

  • 1 cup almond flour (adds moisture and a subtle nutty flavor)
  • 1 cup all-purpose flour (for structure and softness)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

wet ingredients

  • 1 cup granulated sugar (just enough sweetness without overpowering)
  • 1/2 cup extra virgin olive oil (gives richness and a lovely fruity aroma)
  • 3 large eggs (for structure and moisture)
  • 1/2 cup freshly squeezed orange juice (for bright, tangy citrus flavor)
  • 1 unit zest of 1 orange (packs an extra punch of citrus)
  • 1 teaspoon almond extract (for a warm, nutty depth)

  • to taste none powdered sugar (for dusting, optional)

Instructions 

  • Preheat oven to 350°F (175°C). Grease and flour a cake pan.
  • In a bowl, whisk together almond flour, all-purpose flour, baking powder, baking soda, and salt.
  • In another bowl, beat eggs with sugar, then add olive oil, orange juice, orange zest, and almond extract. Mix well.
  • Combine wet and dry ingredients until just blended. Pour batter into prepared pan.
  • Bake for 40 minutes or until a toothpick inserted in the center comes out clean. Cool and dust with powdered sugar if desired.

Notes

Use fresh orange juice and zest for the best flavor. Store the cake in an airtight container for up to 2 days.
