Ingredients

Crust

  • 1 pre-baked tart shell pre-baked tart shell (sweet pastry dough)

Pastry Cream

  • 2 cups whole milk
  • 4 large egg yolks
  • 0.5 cup granulated sugar
  • 0.25 cup cornstarch
  • 2 tablespoons unsalted butter (cut into cubes)
  • 1 teaspoon vanilla extract

Topping

  • Assorted for topping Assorted fresh fruits (strawberries, blueberries, raspberries, kiwi, mandarins, grapes)
  • Optional for brushing Apricot glaze or melted jelly (for shine)

Instructions 

  • Heat milk until hot; whisk egg yolks, sugar, and cornstarch until smooth.
  • Temper egg mixture with hot milk, then return to saucepan and cook until thickened. Remove from heat, add butter and vanilla, then chill.
  • Spread chilled pastry cream into the tart shell, then arrange fresh fruits on top. Brush with glaze if desired.
  • Chill the assembled tart for 30 minutes before serving.

Notes

Use ripe fruits for best flavor and appearance.
