Quick and delicious shrimp pancakes made in just 15 minutes, perfect for a savory snack or light meal.

Ingredients

  • 500 g shrimp (to make about 300g of shrimp paste)
  • 2 tbsp green peas
  • 2 tbsp finely diced carrots
  • 2 tbsp corn kernels
  • 1 tbsp cornstarch
  • 1 egg white egg white
  • 1 tsp salt
  • 1 tbsp walnut oil
  • 1 tbsp avocado oil for frying

Instructions 

  • Peel and devein the shrimp, then finely chop or blend into a paste.
  • Mix the shrimp paste with vegetables, cornstarch, egg white, salt, and walnut oil until well combined.
  • Shape the mixture into small balls and flatten into pancakes, then coat with a little oil.
  • Heat avocado oil in a pan and fry the pancakes until golden brown on both sides.

Notes

Use gloves when shaping the pancakes to prevent sticking.
