This quick and flavorful vegetable fried rice is perfect for a fast weeknight dinner, packed with colorful vegetables and savory soy sauce.
Ingredients
Rice and Vegetables

cooked jasmine rice

broccoli florets

frozen mixed vegetables
(peas, carrots, corn, green beans, lima beans)

green onion
green onion (divided into white and green parts)
(finely chopped)

vegetable oil
(or any neutral oil)

regular soy sauce

dark soy sauce

Instructions
Heat 1 tbsp vegetable oil in a large pan over medium-high heat. Fry scallion whites and garlic until fragrant, about 10 seconds.
Add broccoli and mixed vegetables; stir-fry for 1-2 minutes until vibrant. Push to side of pan.
Add remaining oil and beaten eggs; let set for 10 seconds, then scramble. Push to side.
Add rice, soy sauces, sesame oil, and pepper; toss until evenly coated. Mix in scallion greens and serve.
Notes
Use day-old rice for best results and quick cooking.
